A Christmas Tradition: Rediscovering Wine Cake Memories
Every Christmas season, my father’s orphanage in Mumbai came alive with the spirit of giving and community. One of the most cherished donations was the wine cake – a delightful treat that made every festive moment unforgettable. Ingredients:

100 gms Seedless Black Raisins: Soaked in wine (preferably Port wine) for 5 to 7 days.

1/2 cup Powdered Sugar: Castor sugar works well.

3 tbsp (70 gms) Caramel Syrup( I made this at Home)

100 gms All-Purpose Flour

100 gms Butter: Room temperature.

1/2 tsp Baking Powder

1 tbsp Glycerin: Optional (can be skipped).

1 tsp Vanilla Essence

2 tsp Caramel Colour: Can be skipped

8 x 4 inches Cake Tin
Baking Instructions:

Preheat your oven to 160°C to 170°C.

Prepare the raisins by soaking them in wine for 5 to 7 days.

In a mixing bowl, beat the eggs and sugar until light and fluffy.

Add the caramel syrup, vanilla essence, and caramel colour, mixing well.

Sift together the flour and baking powder, then fold gently into the wet mixture.

Melt the butter and incorporate it into the batter.

Add the soaked raisins, ensuring they’re evenly distributed.

Pour the batter into a greased and lined cake tin.

Bake for 40 to 50 minutes or until a toothpick inserted into the centre comes out clean. Baking time may vary based on your oven and the size/type of the cake tin.

Once baked, let the cake cool completely before wrapping it in cling film. Refrigerate overnight for easy slicing and enhanced flavour.
Storage Tips:

At room temperature: Up to a week in an airtight container.
